Save the extra syrup for breakfast cocktails, desserts, or to make additional servings of bikinis.
Bikini Recipe
Serves 10 servings
For the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Cocktail (yields 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Syrup: Put all the items into a pan, bring to a simmer, mixing until the sugar dissolves. After that, remove from the burner allowing it to cool completely. Transfer into a sealable bottle, close it and refrigerate it in the refrigerator, where it will keep for around a month.
To make Premix: Combine every liquid ingredients into a big jug, allow it to infuse for an hour, then filter it , ideally through a fine cloth, making it completely strained.
To serve: Measure 85ml of the premix into a stirring glass filled with ice, gently stirring gently for about 60 seconds to cool it down. Pour into an chilled martini glass or equivalent, decorate with some cranberries adding the final touch using a light spray of mandarin oil over the drink.
